How to stay interested in cooking healthy?

Let’s face it, we’re busy and we have lives, most of you are probably busier than I am. I have no children, I have a terribly pampered cat and I feel guilty if I don’t spend enough time with my friends and family frequently, to the point where I very rarely get time to myself. Naturally there’s boyfriend as well, but he’s mostly self-sufficient and I’m not required to do too much in that area, apart from think of food ideas.

The hardest thing for me is to think of new and exciting things to cook for dinner, mostly because we don’t do take-out anymore so when we’re in a rush and tired and need food, we need quick things to cook. Not easy at the best of times.

Sometimes I’ll have beans with egg on toast. I can hear the yawns and I haven’t even pressed ‘publish’ yet. It’s not that bad, its rather nice but at the moment my fridge is bare, there is nothing in the fridge, last time I looked there was lettuce that had clearly seen it’s day and a plum… When you open the fridge you literally hear crickets *pause for cricket sound*, so I’ve headed to the internet for inspiration and ideas.

And when I say inspirations and ideas, what I really mean is recipe’s with awesome pictures, minimal ingredients and easy steps that have already been created by wonderful and talented cooks!

Today I have found for recipes to take me through next week

Three of them are from the same blog, I tend to find a good recipe with great pictures and I go with it. I’m sure I’ll find more along the way as I google my way through the day. My tip with marinating (I was spell checking and it came up with uriniating – wtf?) is to do it before you go to work, that extra 15 minutes early you get out of bed will make it possible to have a nice dinner when you get home and it’ll be there waiting so you’ve got no excuse to grab takeout or otherwise you’ve just wasted money on takeout and money on food that you already bought.

We don’t want to be wasteful… now what about some desert? Have some fruit! Don’t you hate it when people say that? If you must get that sugar hit, minimise it with honey (natural) or sprinkle some icing sugar on some raspberries (more than a teaspoon is taking the piss).

My fav blog is Chocolate Chilli Mango, she’s got the low down on putting protein in EVERYTHING and making it rock! I’ve made the Raspberry Paleo Muffins, the protein bars (both versions) but because I’m not sure about where I stand with chocolate I haven’t made any more!

This stuff has flavour! The more prepared you are the more time you have for exercise…

  1. I have been thinking about this too because I hear fat people say they don’t have time to cook. Some of my meals are quicker to make than driving to my local pizza shop, picking up and pizza and driving home (I know because I have timed it).

    Something that is easy to do is make a big pot of chilli beans on the weekend and then keep some in the fridge and some in the freezer. I buy my beans in bulk so I put plenty of kinds in the same batch: dark and light red kidney beans, pinto beans, adzuki beans, borlotti beans and chick peas. Then I either pour over corn chips and cover with salad, use them to fill wholemeal pancakes or use them as a topping on sweet potato and corn fritters.

    I also make wholemeal wraps filled with falafel, salad and maybe a fried egg or use the wraps as a pizza base which makes quite a low carb pizza.

    Something that is really quick and easy is vegetable frittata with salad. Crack 3 or 4 eggs into a bowl and add a sprinkle of stock powder (I use Vegeta), heaps of dried basil, just a bit of paprika and about ½ cup milk. Wisk all that together. Then throw ½ packet of frozen veg (I use a mix with carrot, broccoli, cauliflower and snow peas) and some frozen corn into a hot frypan and pour the egg mix over the top. Grate some cheese over that then put a lid on and cook on low for about 5 minutes. Then under a hot grill for another 5 minutes to brown the top. While the frittata is cooking, I make a salad with lettuce, tomato, grated carrot and olives. I like grape seed oil and balsamic vinegar as a dressing (which I pour over before I put the grated carrot on). 3 or 4 eggs is for two people by the way. If the frittata is not cooked I sometimes have to put the saucepan back on the stove with the lid on for a couple of minutes.

    The corn and sweet potato fritters are really easy. I just add grated sweet potato and frozen corn to a thick pancake mix, add some curry powder, garlic and cheese and fry. I spoon some hot bean mix over the top and serve with the same salad as the frittata. This whole meal takes 10 to 15 minutes to make.

What I find useful is having a little healthy food cook book in my kitchen, I carefuly selcted the one where I like the post recipes and buy ingrediets for a few meals a few days in advance. When you know you have all the ingrediets it’s easier to have it cooked/baked quickly. As for the healthy dessert, I recommend cooked cousous with a bit of honey, cinnamon and any kind of fruit like raspberries, blackberries, etc. It’s healthy and easy to prepare:-)

When you know you have all the ingrediets it’s easier to have it cooked/baked quickly. As for the healthy dessert, I recommend cooked couscous with a bit of honey, cinnamon and any kind of fruit like raspberries, blackberries, etc. It’s healthy and easy to prepare:-)
